  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil (for searing)
  • 1 tablespoon unsalted butter (optional, for finishing)
  • Salt and black pepper (to taste)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Wash and peel potatoes if desired, then cut into large, uniform chunks. Place them at the bottom of the slow cooker insert to create a bed for the pork.
  2. Pat the pork loin dry with paper towels. Rub the entire roast with olive oil, salt, black pepper, thyme, rosemary, and oregano.
  3. Heat a large skillet over medium-high heat. Sear the pork loin for 2-3 minutes on each side until browned (optional but recommended).
  4. Place the seared pork loin on top of the potatoes. Scatter the sliced onions and minced garlic around the pork.
  5. In a small bowl, whisk together the chicken broth, soy sauce, and Dijon mustard. Pour this mixture evenly over the pork and potatoes.
  6. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the pork reaches an internal temperature of 145°F (63°C) and potatoes are fork-tender.
  7. Remove the pork from the pot and let it rest for 10 minutes on a cutting board to redistribute juices.
  8. Optional: Thicken the sauce by mixing 1 teaspoon cornstarch with 1 tablespoon cold water and stirring it into the slow cooker on high for 15 minutes.
  9. Slice the pork against the grain and serve over the potatoes with the sauce spooned on top. Garnish with fresh parsley if desired.

Notes
