Instructions

  1. Preheat oven to 375°F (190°C).
  2. Score an ‘X’ on the bottom of each peach and boil for 30-45 seconds, then transfer to an ice bath. Peel and dice peaches into bite-sized pieces.
  3. In a large bowl, combine diced peaches, blueberries, sugar, lemon juice, vinegar, and vanilla. Sprinkle cornstarch over the fruit and toss to coat. Let sit for 10 minutes.
  4. In a separate bowl, whisk together oats, flour, brown sugar, cinnamon, and salt. Add cold cubed butter and use a pastry cutter or fingers to work it in until pea-sized chunks and flakes form.
  5. Pour the fruit mixture into a 9×9 inch baking dish. Sprinkle the topping mixture over the fruit and press down gently.
  6. If making ahead, cover tightly and refrigerate for up to 24 hours. Let sit at room temperature for 20 minutes before baking if refrigerated.
  7. Place the dish on a baking sheet and bake for 45-50 minutes until the topping is golden brown and filling is bubbling. Tent with foil if topping browns too quickly.
  8. Cool for at least 20 minutes before serving to allow filling to set. Serve warm with ice cream or whipped cream.
