- 2 large eggs, beaten

Instructions
- Mash the avocados in a medium bowl until textured but not smooth. Mix in lemon juice, garlic powder, salt, pepper, and red pepper flakes. Taste and adjust seasoning.
- Cut bread slices into halves or quarters to create manageable lunch-sized pieces.
- Set up a breading station with three shallow bowls: one with flour mixed with smoked paprika, one with beaten eggs, and one with Panko breadcrumbs.
- Spread about 2 tablespoons of the avocado mixture onto each bread piece.
- Dip the avocado-covered side into the flour, shaking off excess, then into the egg wash, and finally press firmly into the Panko breadcrumbs to coat evenly.
- Pan-fry in a skillet with oil over medium heat for 2-3 minutes until golden, flip, and cook avocado side for 1-2 minutes. Alternatively, air fry at 375°F (190°C) for 8-10 minutes, flipping halfway.
- Cool the toast on a wire rack for 5 minutes to set the coating.
- Store in an airtight container in the refrigerator for up to 4 days.
- Reheat in an air fryer or toaster oven at 350°F (175°C) for 3-5 minutes to restore crispness.
Notes
Ensure avocados are ripe but not mushy to prevent soggy breading. Press breadcrumbs firmly to ensure they adhere during reheating. Cool completely before storing to prevent condensation. Avoid microwaving as it makes the bread soft.
