  • 3 cups cold, day-old jasmine rice
  • 2 tablespoons neutral oil (vegetable, canola, or peanut)
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon dark soy sauce (optional)
  • ½ teaspoon white pepper
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 large eggs, beaten
  • 3 stalks green onions, chopped (white and green parts separated)
  • ½ cup frozen peas and carrots

Instructions

  1. Break up any clumps in the cold rice with your fingers to ensure individual grains.
  2. In a small bowl, whisk together the soy sauce, dark soy sauce (if using), and white pepper. Set aside.
  3. Place a wok or large skillet over medium-high heat. Add oil and heat until it shimmers but does not smoke.
  4. Add the white parts of the green onions, minced garlic, and grated ginger. Stir-fry for 30 seconds until fragrant, being careful not to burn the garlic.
  5. Push aromatics to the side of the pan. Pour in beaten eggs and scramble until just cooked but still soft. Mix back into the aromatics.
  6. Add the rice to the pan. Press down and break up remaining clumps. Stir-fry vigorously for 2-3 minutes until the rice toasts slightly.
  7. Pour the soy sauce mixture over the rice and toss quickly to coat evenly. Add frozen peas and carrots.
  8. Continue stir-frying for another 2-3 minutes until the rice is hot throughout and slightly crispy.
  9. Turn off the heat. Stir in the green parts of the green onions. Taste and adjust seasoning if needed. Serve immediately.

Notes

Use cold, day-old rice for best results to prevent mushiness. If using fresh rice, spread it on a baking sheet and freeze for 20 minutes to dry it out. Ensure the pan is hot enough to sizzle immediately when rice is added to achieve the desired texture. Do not overcrowd the pan; cook in batches if making a large amount.
